As gorgeously (and tantalizingly) demonstrated in Rancho Gordo’s new cookbook, “The Bean Book: 100 Recipes for Cooking with All Kinds of Beans” (Ten Speed, $35), beans are indeed a magical fruit, though not in the way you heard as a kid. Classified as both a vegetable and a plant-based protein in the USDA’s Dietary Guidelines for Americans, beans and other legumes can be the ingredient you build an entire vegetarian or veggie-forward meal around.

A 7-year-old boy who was reportedly abducted by a 26-year-old woman was last seen in a white Ford Focus near La Junta, the Colorado Bureau of Investigation said in an Amber  Alert on Monday. Uriah Saye Jr. was last seen at around 12:50 p.m. in the 2012 Focus near Cheraw, 10 miles north of La Junta in Otero County, agency officials said in the alert.

A 63-year-old Park County woman died Friday night in a head-on collision on U. S. 285 near Conifer, according to Colorado State Patrol officials. Around 6 p.m. Friday, a woman driving a Dodge pickup truck southbound on U. S. 285 suddenly crossed into the northbound lanes and crashed into an Xcel service truck, state patrol officials said in a news release. The woman driver was pronounced dead at the scene of the crash, state patrol officials said.
