Inspired by my mom’s best chicken salad recipes (the star of many wedding and baby showers), this recipe subs out chicken for cauliflower. When sheet-pan roasted to become tender and slightly sweet, the cauliflower soaks up the salad’s ingredients — crisp apples, tart-sweet dried cranberries and curried mayo-yogurt dressing, tangy with lime.

Mayor Mike Johnston has responded to the big changes City Council members want him to make to his proposed 2025 budget by offering up $7.3 million in reshuffled spending, including a boost to the city’s rent assistance program.
That’s roughly 25% of the value of budget changes council members asked for.
In a letter sent to council members Friday, the mayor outlined areas where he was willing to compromise with them after council members requested $29.1 million in changes earlier this month.
The mayor proposed $1.76 billion in general fund spending next year, just a 0.6% increase over the city’s 2024 spending in the wake of slowing sales tax growth.
Johnston has earmarked an additional $3 million for the city’s Temporary Rent and Utility Assistance program, or TRUA.
Southbound Interstate 25 reopened between Downing Street and University Boulevard after it was closed for a Denver Police Department investigation, agency officials said Monday.

Denver may still be waiting for the first snow of the season, but Colorado’s mountains already have enough powder for skiers to cause avalanches, according to the Colorado Avalanche Information Center.
Two skiers caused an avalanche at the Silverton Mountain ski resort on Sunday after the “first notable snowfall of the season,” agency officials wrote in a report.
The skiers were skiing the north ridge near the “grassy run” when they saw cracking behind moving snow about halfway down.
