If you use "life", you are using the uncountable noun meaning "the state and experience of being alive". This is something that we all share, as in "Life is wonderful". If you use the plural form, you are speaking of the separate lives of individuals, as in "The lives of the peasants were filled with hard work." (crossposted) More @Wikipedia
