They might not be acclaimed spots but then again most restaurants generally aren't, even the really authentic ones. I'd argue this kind of sushi is probably more prevalent than actual authentic sushi.

Trying out new places was one of my favorite activities pre-pandemic - I'd stay on top of where my favorite chefs were, and gambled on up-and-comers all the time. Now, I actively don't want to give my money to the food and beverage industry.
