I don't think either "hand-carved" or "hand-forged" is common enough to have reached the level where either one is treated as a single word. (English doesn't automatically combine words like, say, German.) That reduces the choice to "hand carved" versus "hand-carved." Between those, I agree with lingobingo that you should use a hyphen for clarity. More @Wikipedia
