Pour into a bowl and cover to keep warm. Bring a medium pot of water to a gentle simmer. For smoother poaching, add a splash of vinegar. Create a whirlpool in the water with a spoon and gently crack an egg into the center. Let the egg cook for about 3 minutes, then use a slotted spoon to transfer it to a paper towel–lined plate.
