If it's Sunday, 'this Monday' is tomorrow. 'Next Monday' is the next but one. If it's Sunday, 'next Monday' is a week tomorrow. I too would take 'Monday week' to mean 'a week on Monday'.

(Honestly, some people see Saturday/Sunday as the bookends of the week, not the final two days). Because of this, I tend to use "this coming Wednesday" or "Wednesday next week" to avoid confusion.
