  • Does anyone know how many watts are needed to maintain a 5 or 10 gallon ...
To boil off a gallon of water in an hour it takes about 2,400 watts delivered (not counting that lost to heat transfer) for that hour. So if you lose ~750 watts through the kettle sides you will want a 3.15kW element. I run a 4.5kW element to boil 12.25 gallons down to ~10.70 gallons in an hour...which is on the high side for boiloff rate (12.7%).

  • What's an accurate evaporation rate for the hour long boil?
In Denver, Colorado, water will boil at about 94°C. Do not confuse boiling with cooking. Cooking pasta in Denver is a slower process because the water is at a lower temperature. Also, realize that water boiling rapidly is no hotter than water boiling slowly. The temperature of the water remains constant during the boiling process.

  • Is a 7,500 BTU propane burner good enough to boil 3 gallons of water ...
Roughly, it takes 1 btu/lb to raise water 1 F. Water weighs 8.3 lb/gal. In order to bring 3 gallons of water from room temp to boiling would be 3 x 8.3 x (212 - 70) = 3535 btu's. So if you assume 100% heat transfer, a 7500 btu burner should bring 3 gallons to boil in roughly 25 minutes.

Tossed the boiled water in, put the lid on and kept a rolling boil, but once again fell back to 90-95 almost instantly without the lid. I can keep it at around 95 by fashioning a "cowl" around the top of the pot with aluminum foil to shrink the opening, but I still can't get it above more than a very lazy bubble.

  • Boiling hops ALONE in water
That theory was debunked quite a while ago. In fact, the very first Basic Brewing Video episode covered hop utilization in plain water. One argument for having some extract in the wort however is that in plain water, the hops have a strong tendency to float on top. In a slightly higher gravity wort, the hops roll with the boil better.
