The state temporarily closed three South Florida restaurants during the week of Dec. 1 with violations ranging from flies and roaches to employee issues. Among the observations: One Palm Beach County cafe had an employee who handled a soiled wiping cloth, then touched clean utensils and food-preparation equipment without washing their hands, and one who carried dirty dishes to the sink and washed their hands without soap.
